9/21 Chicken, Chicken, Duck, Duck


            Poultry prep day! The biggest take away fro me today was how to properly bone a chicken. It’s an exceptionally useful technique that I can use over and over. This is the foundation for roasting a chicken, making stock, getting a chicken breast and prepping for a whole host of recipes. While ducks were slightly more difficult it was a similar process and I hope to use in the future.

I am proud of how fast I was able to accomplish deboning both birds.

I should work on better mis prep.

Take a ways

·      Always try to work with cold meat when cutting. The fat does not splooge as much.
